B is for Beetroot


The juicer has sat sulking in the corner of the kitchen for months and months and months. It took a part-time job as a stand for the digital radio helping to improve reception but it was not happy. Until this morning, when a glut of beetroot and carrots led to a dusting down and resuscitation. WARNING - beetroot juice is a devastatingly messy substance that will mark its territory in the unlikeliest of places in your kitchen.

Beetroot zinger

1 beetroot
2-3 carrots
2 apples
knob of ginger
splash of lemon juice (optional)

Juice and drink.

  1. Funny that you have both beetroots and carrots as both vegetables are screaming out to be used in my kitchen too. Maybe I should make some of this Beetroot Zinger! Fantastic colour.

    Totally agree with you on beetroot being a messy substance!

  2. I shied away from beetroot for many years as my only memory of it was those sad summer salads of my youth - egg, limp lettuce, tomatoes and boiled ham(or that processed meat that had stuffing through the middle of it.) The vinagery beetroot just seemed to stain everything!

    And while I enjoy them roasted - I prefer the earthiness of raw beetroot. :)

    Sue (my wife) used some beetroot in her chocolate brownies the other week which was very successful.

    Other than the pickly beetroot, i have to admit that beetroot did not feature much in my diet. It was only because of my husband that I began to make more of an effort with them. I've made quite a few recipes. See below.

  4. I should dust off my juicer too - sounds delicious!

    Strangely beetroot does seem to wash out of most things. Once upon a time a freezer stood on a beige carpet and (ahem) defrosted and the beetroot soup that was in said freezer somehow oozed and leaked all over said carpet. But with lots of mopping and padding it all came out! I love raw beetroot shredded, and I like to layer home cooked beetroot with rings of sweetish onions and fresh dill and marinade in a vinaigrette for a couple of days. I was reading about white beetroot the other day, sounds like a good idea, but would it be the same?

    Joanna - I have heard of a golden variety too. Will have to ask at the next farmers market.

    ... and I am banned from drinking this juice on the beige settee. :)
